How To Make Vegan Beet Salad Recipe
A colorful vegan salad packed with nutrients from beets, greens, and nuts.
Serves:
Ingredients
- 4 medium-sized beets, washed and trimmed
- 6 cups mixed salad greens
- 1/2 cup chopped walnuts, toasted
- 1/4 cup dried cranberries
- 1/4 cup red onion, thinly sliced
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- salt and pepper, to taste
Instructions

Preheat oven to 375°F. Wrap each beet in foil and bake for 45 minutes or until tender when pierced with a knife.

While the beets are cooking, whisk together balsamic vinegar, olive oil, salt, and pepper in a small bowl.

Once the beets have cooled, peel and cut into bite-size pieces.

In a large bowl, toss the salad greens, beets, walnuts, cranberries, and red onion with the balsamic dressing.
