How To Make Vegan Beet Salad Recipe

Ingredients

  • 4 medium-sized beets, washed and trimmed
  • 6 cups mixed salad greens
  • 1/2 cup chopped walnuts, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F. Wrap each beet in foil and bake for 45 minutes or until tender when pierced with a knife.

  2. While the beets are cooking, whisk together balsamic vinegar, olive oil, salt, and pepper in a small bowl.

  3. Once the beets have cooled, peel and cut into bite-size pieces.

  4. In a large bowl, toss the salad greens, beets, walnuts, cranberries, and red onion with the balsamic dressing.

  5. Serve and enjoy!
