How To Make Vegan Black Bean Casserole
A hearty and flavorful vegan twist on a classic casserole!

Ingredients
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 green bell pepper, diced
- 1 red onion, diced
- 1 jalapeno pepper, seeded and diced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 cup shredded vegan cheese
- 1/4 cup vegetable broth
- Tortilla chips, for serving
Instructions

Preheat the oven to 375°F.

In a large bowl, mix together the black beans, bell pepper, red onion, jalapeno, olive oil, cumin, smoked paprika, garlic powder, salt, and pepper.

Add the cilantro and 1/2 cup of the vegan cheese to the bowl and mix again.

Spread the mixture evenly in a baking dish.

Top with the remaining cheese and pour the vegetable broth over everything.

Bake for 25-30 minutes or until the cheese is melted and bubbly.

Serve hot with tortilla chips.
