How To Make Vegan Black Bean Casserole

Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 green bell pepper, diced
  • 1 red onion, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded vegan cheese
  • 1/4 cup vegetable broth
  • Tortilla chips, for serving

Instructions

  1. Preheat the oven to 375°F.

  2. In a large bowl, mix together the black beans, bell pepper, red onion, jalapeno, olive oil, cumin, smoked paprika, garlic powder, salt, and pepper.

  3. Add the cilantro and 1/2 cup of the vegan cheese to the bowl and mix again.

  4. Spread the mixture evenly in a baking dish.

  5. Top with the remaining cheese and pour the vegetable broth over everything.

  6. Bake for 25-30 minutes or until the cheese is melted and bubbly.

  7. Serve hot with tortilla chips.
