Ingredients

  • 1 pizza crust
  • 1/2 cup of tomato sauce
  • 1/2 cup of fresh basil leaves
  • 1/4 cup of cashews, soaked
  • 1/4 cup of nutritional yeast
  • 1 tbsp of lemon juice
  • 1/2 tsp of garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.

  2. Spread tomato sauce over pizza crust, leaving a small border around the edge.

  3. Scatter basil leaves evenly over sauce.

  4. In a blender, combine cashews, nutritional yeast, lemon juice, garlic powder, salt, and pepper. Blend until smooth and creamy.

  5. Drop spoonfuls of cashew mozzarella over pizza.

  6. Bake in preheated oven for 12-15 minutes, or until crust is golden brown and cheese is bubbly.

  7. Let cool for a few minutes before slicing and serving.
