How To Make Chicken & Sweetcorn Tacos

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp taco seasoning
- 1 cup canned sweetcorn, drained
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- 8 taco shells
- Optional toppings: diced avocado, shredded cheese, sour cream
Instructions

Preheat your grill or stovetop grill pan.

Season the chicken breasts with taco seasoning, then drizzle with olive oil.

Grill the chicken for 6-8 minutes per side, until cooked through.

Remove the chicken from the grill and let it rest for a few minutes.

Slice the chicken into thin strips.

In a bowl, combine the sweetcorn, red onion, cilantro, and lime juice to make the salsa.

Warm the taco shells in the oven or over the grill for a few minutes.
