  • 2 chicken breasts, cooked and shredded
  • 1 cup sweetcorn kernels
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Chopped spring onions for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onion, minced garlic, and grated ginger. Cook until fragrant and onions are translucent.

  2. Pour in the chicken broth and bring to a simmer. Add the shredded chicken and sweetcorn kernels to the pot and allow to cook for 10 minutes.
