  • 4 boneless, skinless chicken breasts
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 cup vegetable oil
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a shallow bowl, whisk together eggs, garlic powder, oregano, black pepper, and salt.

  3. In another shallow bowl, mix together breadcrumbs and Parmesan cheese.

  4. Place flour in a third shallow bowl.

  5. Dredge each chicken breast in flour, shaking off any excess.

  6. Dip chicken in egg mixture, then coat in breadcrumb mixture.

  7. In a large skillet, heat oil over medium-high heat. Add chicken and cook until golden brown, about 3-4 minutes per side.

  8. Transfer chicken to the prepared baking sheet and spoon marinara sauce over each breast.

  9. Sprinkle mozzarella cheese on top of the sauce and bake for 20-25 minutes, or until cheese is melted and chicken is cooked through.

  10. Garnish with fresh basil and serve hot.
