Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F.

  2. In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.

  3. Mix in egg, vanilla extract, and pumpkin puree until evenly combined.

  4. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.

  5. Gradually mix dry ingredients into wet ingredients until the cookie dough comes together.

  6. Fold in chocolate chips.

  7. Line a baking sheet with parchment paper and scoop cookie dough using a cookie scoop.

  8. Bake for 12-15 minutes or until golden brown.

  9. Remove from oven and allow them to cool on the baking sheet for 5-10 minutes.

  10. Transfer to a wire rack to cool completely.
