  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup old fashioned oats
  • 1/2 cup white chocolate chips
  • 1/2 cup dried cranberries

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Gradually stir in the flour, baking soda, and salt until just combined.
  5. Fold in the oats, white chocolate chips, and dried cranberries.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until golden brown.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
