Keto Cheese Taco Shells Recipe

One of my favorite low carb recipes for a keto diet is these keto cheese taco shells that are just so crispy and delicious to eat with taco meat and other flavorful fillings. Honestly, these keto tacos are the best way for me to enjoy my favorite Mexican food without having to worry about the calories. With just a few simple ingredients, I got to make a delicious batch of keto taco shells just for me! 

These low carb tacos are basically made out of shredded or grated cheese. Each taco shell is baked in the oven for a few minutes until they resemble a flat cheese tortilla. You don’t need a tortilla press for this process since the taco shell is purely made out of cheese instead of flour. It’s best to form the cheese right on top of the lined baking sheet. After it’s done baking, let it cool and then place the slightly bendable tortilla over the handle of a spoon that is balanced on two cups. Let the cheese cool again and wait until the taco cheese shells retain their taco shape. 

I prepared the taco meat next while waiting for the cheese taco shells to cool and harden. I combined the ground beef with the taco seasoning so it’s extra flavorful. You can also add a bit of spiciness with red pepper flakes or chili flakes. After that, I chose my taco toppines! For this recipe, I went with the classics like cilantro, lettuce, and tomatoes. I experimented with sour cream and avocado slices as well. You can also try adding in other kinds of tasty salsas, like tomatillo salsas or pico de gallo for added flavor and crunch. 

Now that I had my list of favorite toppings, I added in the meat with the taco toppings onto the cool and sturdy cheese taco shells.  They were just amazing to eat! Each bite was so crispy and satisfying. It was just like any other taco! I couldn’t believe that it was a low carb, keto friendly taco. I’m currently on a weight loss keto diet. That’s why making these tacos were a blessing. It satisfied my Mexican food cravings while being on a diet. Honestly, it just tasted so good that I might as well have eaten a real Mexican taco!

How To Make Keto Cheese Taco Shells

Trade your regular corn tortillas with these keto taco shells made with cheese for low-carb taco Tuesdays. Fill them with plenty of seasoned ground beef and your favorite toppings for a scrumptious keto treat!

Ingredients

For Cheese Taco Shells:

  • 2 cups cheddar cheese, shredded

For Taco Meat:

  • 1 lb ground beef
  • 2 tbsp homemade taco seasoning
  • ¼ cup water

For toppings:

  • sour cream
  • avocado
  • cheese
  • lettuce

Instructions

  1. Preheat oven to 350 degrees F.
  2. On a baking sheet lined with parchment paper or a silicone mat place ¼ cup piles of cheese 2-inches apart. Press the cheese down lightly so it makes one layer.
  3. Place baking sheet in the oven and bake for 5 to 7 minutes or until the edges of the cheese are brown.
  4. Let the cheese cool for 1 to 2 minutes until it is firm enough to lift but still bendable. Lift the cheese up and place it over the handle of a spoon or other utensil that is balanced on 2 cups.
  5. Let cheese cool completely then remove.
  6. While baking cheese taco shells place the ground beef in a skillet over medium high heat cooking until it is completely cooked through.
  7. Drain the grease from the meat and then add the homemade taco seasoning. Pour water into skillet and stir everything around mixing it together.
  8. Simmer for 5 minutes or until liquid has cooked away.
  9. Add meat to taco shells and top with desired taco toppings.
  10. Serve and enjoy.
