Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/4 cup melted butter
  • 2 ripe avocados
  • 1/4 cup lime juice
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • Zest of 1 lime
  • Whipped cream for topping (optional)

Instructions

  1. Preheat the oven to 350°F.

  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, and melted butter to make the crust.

  3. Press the crust mixture into a 9-inch pie dish and bake for 10-12 minutes, until golden brown. Let it cool completely.

  4. In a food processor, blend avocados, lime juice, heavy cream, vanilla extract, and lime zest until smooth.

  5. Pour the filling into the prepared pie crust.

  6. Refrigerate for at least 2 hours or until set.

  7. Serve chilled with whipped cream (optional).
