Ingredients

  • 8 large mushrooms
  • 1 avocado
  • 1 tbsp lime juice
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 tbsp chopped cilantro
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Remove stems from mushrooms and gently scrape out the gills using a spoon.

  3. In a small bowl, mash the avocado with lime juice, garlic powder, onion powder, cayenne pepper, salt, pepper, and cilantro.

  4. Stuff each mushroom cap with the avocado mixture and place them on a baking sheet.

  5. Top with shredded cheddar cheese.

  6. Bake in the oven for 20-25 minutes, until the mushrooms are tender and the cheese is melted and bubbly.

  7. Serve hot.
