
How To Make Gourmet Mushroom Risotto
Creamy and flavorful Arborio rice cooked with a mix of gourmet mushrooms, finished with parmesan cheese.
Serves:
Ingredients
- 1 cup Arborio rice
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed gourmet mushrooms (cremini, shiitake, oyster)
- 1/2 cup white wine
- 4 cups vegetable or chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper, to taste
Instructions

In a saucepan, heat the broth and keep it on simmer.

In another pan, heat the butter and add diced onions and garlic. Saute for a minute or two until fragrant.

Add Arborio rice and cook until edges are translucent.

Add white wine and cook until it is absorbed.

Add one ladleful of broth to the rice at a time, stirring constantly, until the broth is absorbed. Repeat until all the broth has been added and rice is cooked.

Saute the mushrooms in a separate pan and set aside.

Add grated Parmesan cheese and salt and pepper to taste. Stir in the sautéed mushrooms.

Serve hot with a garnish of extra cheese and fresh parsley.
