How To Make Gluten-Free Chicken and Rice Casserole Recipe
A hearty and comforting casserole made with gluten-free ingredients, tender chicken, and fluffy rice.
Serves:
Ingredients
- 1 lb of boneless, skinless chicken breasts, cut into bite-size pieces
- 1 cup of uncooked white rice
- 2 cups of chicken broth
- 1/2 cup of water
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp of dried basil
- 1 tsp of dried oregano
- Salt and pepper to taste
- 1 cup of shredded cheddar cheese
- 1 tbsp of olive oil
Instructions

Preheat the oven to 375°F.

In a large skillet, heat olive oil over medium heat. Add chicken and sauté for 5-7 minutes, until browned. Remove chicken from the skillet and set aside.

In the same skillet, add onion, bell peppers, and garlic. Sauté for 5 minutes, until the vegetables are softened.

Add rice, chicken broth, water, basil, oregano, salt, and pepper to the skillet. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

Add chicken to the skillet and mix well with the rice mixture.

Transfer everything to a 9×13 inch baking dish and top with shredded cheese.

Bake in the preheated oven for 30-35 minutes, until the cheese is melted and bubbly.

Let cool for a few minutes before serving.
