Ingredients

  • 1 lb of boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 cup of uncooked white rice
  • 2 cups of chicken broth
  • 1/2 cup of water
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tsp of dried basil
  • 1 tsp of dried oregano
  • Salt and pepper to taste
  • 1 cup of shredded cheddar cheese
  • 1 tbsp of olive oil

Instructions

  1. Preheat the oven to 375°F.

  2. In a large skillet, heat olive oil over medium heat. Add chicken and sauté for 5-7 minutes, until browned. Remove chicken from the skillet and set aside.

  3. In the same skillet, add onion, bell peppers, and garlic. Sauté for 5 minutes, until the vegetables are softened.

  4. Add rice, chicken broth, water, basil, oregano, salt, and pepper to the skillet. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

  5. Add chicken to the skillet and mix well with the rice mixture.

  6. Transfer everything to a 9×13 inch baking dish and top with shredded cheese.

  7. Bake in the preheated oven for 30-35 minutes, until the cheese is melted and bubbly.

  8. Let cool for a few minutes before serving.
