  • 1 cup gluten-free flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F and grease an 8-inch baking pan.

  2. In a medium bowl, mix together gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In a separate large bowl, whisk together pumpkin puree, brown sugar, vegetable oil, eggs, and vanilla extract.

  4. Slowly add dry ingredients to wet ingredients and mix until well combined.

  5. Pour batter into prepared pan and bake for 45 minutes or until a toothpick inserted comes out clean.

  6. Let cool before slicing and serving.
