How To Make Crunchy Courgette Pickle
A tangy and crunchy pickle made with fresh courgettes, perfect as a side dish or condiment.

Ingredients
- 2 medium-sized courgettes, thinly sliced
- 1/2 cup white vinegar
- 1/4 cup granulated sugar
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
Instructions

In a small saucepan, heat the white vinegar, sugar, mustard seeds, turmeric powder, and salt until the sugar has dissolved.

In a large bowl, place the sliced courgettes and pour the hot vinegar mixture over them. Stir well to coat all the slices.

Let the pickle mixture cool to room temperature, then cover and refrigerate for at least 1 hour before serving.
