How To Make Bean & Halloumi Stew

Ingredients

  • 2 cans of mixed beans, drained and rinsed
  • 250g halloumi cheese, cut into cubes
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can of diced tomatoes
  • 1 cup vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.

  2. Add the bell pepper and cook for another 2 minutes.

  3. Stir in the diced tomatoes, vegetable broth, smoked paprika, cumin, salt, and pepper. Bring to a simmer.

  4. Add the mixed beans and halloumi cubes to the pot. Stir gently to combine.

  5. Cover the pot and simmer for 20 minutes, or until the halloumi cubes are tender.

  6. Serve the stew hot, garnished with fresh parsley.
