Ingredients

  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 tbsp chili powder
  • 1 tsp cumin
  • salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant and translucent.

  4. Add bell pepper, carrot, and zucchini to the skillet. Cook for about 5 minutes until the vegetables are slightly softened.

  5. Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Let it simmer for 10 minutes.

  6. Add the cooked pasta to the skillet and mix well until everything is evenly coated.

  7. Transfer the pasta mixture to a baking dish and sprinkle shredded cheddar cheese on top.

  8. Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.

  9. Garnish with fresh cilantro before serving.
