How To Make Courgetti Bolognese

Ingredients
- 4 medium courgettes
- 500g lean ground beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, grated
- 1 can (400g) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- Olive oil, for cooking
- Grated Parmesan cheese, for serving
- Fresh basil leaves, for garnish
Instructions

Spiralize the courgettes into noodles using a spiralizer. Set aside.

In a large frying pan, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the ground beef to the pan and cook until browned, breaking up any lumps with a wooden spoon.

Stir in the grated carrot, crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 15-20 minutes, until the sauce has thickened.

While the sauce is simmering, heat a separate frying pan over medium heat and add a little olive oil. Cook the courgette noodles for 2-3 minutes, until just softened.

Divide the courgette noodles among serving plates and top with the bolognese sauce.

Garnish with grated Parmesan cheese and fresh basil leaves.
