How To Make Little Carrot Cakes with Orange & Honey Syrup

Ingredients
- 1 cup grated carrot
- 1/2 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup orange juice
- 1/4 cup honey
- Zest of 1 orange
Instructions

Preheat the oven to 350°F (180°C) and grease a muffin tin.

In a large bowl, mix together the grated carrot, all-purpose flour, almond flour, sugar, vegetable oil, eggs, baking powder, cinnamon, nutmeg, and salt.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a cake comes out clean.

While the cakes are baking, prepare the orange and honey syrup. In a small saucepan, heat the orange juice, honey, and orange zest over medium heat until the mixture thickens slightly.

Once the cakes are done, remove them from the oven and let them cool for a few minutes.

Drizzle the orange and honey syrup over the warm cakes.

Allow the cakes to cool completely before serving.
