Serves:

Ingredients

  • 150g of mixed dried fruit
  • 50g of butter
  • 75g of brown sugar
  • 1 tbsp of golden syrup
  • 1 tsp of mixed spice
  • 1 tsp of cinnamon
  • 150ml of orange juice
  • 1 tsp of orange zest
  • 150g of self-raising flour
  • 1 tbsp of milk
  • Icing sugar, for dusting

Instructions

  1. In a large saucepan, combine the dried fruit, butter, brown sugar, golden syrup, mixed spice, cinnamon, orange juice, and orange zest.

  2. Place the saucepan over low heat and stir until the butter has melted and the sugar has dissolved.

  3. Bring the mixture to a gentle simmer and let it cook for 10 minutes, stirring occasionally.

  4. Remove the saucepan from the heat and let the mixture cool for 20 minutes.

  5. Preheat the oven to 160°C (320°F) and line a small round cake tin with parchment paper.

  6. Stir the self-raising flour into the fruit mixture until well combined.

  7. Pour the cake batter into the prepared tin and smooth the top.

  8. Bake in the preheated oven for 1 hour and 45 minutes, or until a skewer inserted into the center comes out clean.

  9. Remove the cake from the oven and let it cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

  10. Once cooled, dust the top of the cake with icing sugar.

  11. Serve and enjoy!
