Ingredients
- 8 oz. pasta
- 1 can mackerel (in olive oil)
- 1/2 red onion, chopped
- 1/2 cup chopped celery
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped parsley
- 1/4 cup chopped basil
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- salt and pepper, to taste
Instructions

Cook pasta according to package instructions.

Drain the mackerel and flake it into small pieces.

In a large bowl, combine the cooked pasta, mackerel, red onion, celery, red bell pepper, parsley and basil.

Whisk together the olive oil, red wine vinegar, salt and pepper.

Pour the dressing over the pasta mixture and toss to coat.

Chill the pasta salad for at least 30 minutes before serving.
