How To Make Lemon & Pepper Mackerel Pasta

Ingredients
- 8 ounces of mackerel fillets
- 8 ounces of pasta
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- Juice and zest of 1 lemon
- 1 teaspoon of freshly ground black pepper
- Salt to taste
- Fresh parsley, chopped for garnish
Instructions

Cook the pasta according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the mackerel fillets to the skillet and cook for 3-4 minutes per side, until cooked through. Remove from the skillet and flake into smaller pieces.

In the same skillet, add the cooked pasta, lemon juice, lemon zest, black pepper, and salt. Toss to combine and warm through.

Remove from heat and stir in the flaked mackerel.

Serve the lemon and pepper mackerel pasta garnished with fresh parsley.
