How To Make Mackerel with sizzled garlic, ginger & tomatoes

Ingredients
- 4 mackerel fillets
- 4 cloves of garlic, minced
- 1 thumb-sized ginger, grated
- 2 tomatoes, sliced
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

In a large frying pan, heat vegetable oil over medium heat.

Add minced garlic and grated ginger, and sauté until fragrant.

Season the mackerel fillets with salt and pepper.

Place the fillets in the pan, skin-side down, and cook for 3-4 minutes until crispy.

Flip the fillets and cook for another 2 minutes.

Transfer the fillets to a baking dish and top them with sliced tomatoes.

Bake in the preheated oven for 10-12 minutes, or until the mackerel is cooked through.

Serve the mackerel with the sizzled garlic, ginger, and tomato mixture.
