Fresh mackerel fillets are baked with juicy tomatoes and aromatics for a savory, satisfying dish.

Ingredients

  • 4 mackerel fillets
  • 2 large tomatoes, sliced
  • 1 small red onion, sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F.

  2. Season the mackerel fillets with salt and black pepper and place them in a baking dish.

  3. Layer the tomato and onion slices evenly on top of the fillets, then sprinkle the minced garlic on top.

  4. Drizzle the olive oil and lemon juice over the top of the dish.

  5. Bake in the oven for 20 minutes or until the fish is cooked through and the tomatoes are tender.

  6. Serve hot and enjoy!
