Ingredients

  • 4 cod fillets
  • 2 tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.

  2. In a small bowl, mix together the diced tomatoes, minced garlic, dried thyme, salt, and black pepper.

  3. Place the cod fillets in the prepared baking dish and drizzle with olive oil.

  4. Spoon the tomato mixture over the cod, making sure each fillet is evenly coated.

  5. Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
