How To Make Honey and Lemon Madeleines
Delicate and spongy madeleines infused with a hint of sweetness from honey and tanginess from lemon.

Ingredients
- 2 large eggs
- 1/4 cup honey
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted and cooled
Instructions
- Preheat oven to 375°F. Grease and flour madeleine pans.
- In a large bowl, beat eggs, honey, sugar, vanilla extract, and lemon zest using an electric mixer until light and fluffy.
- In another bowl, whisk together flour, baking powder, and salt.
- Add flour mixture to egg mixture and mix until just combined.
- Add melted butter and mix until smooth.
- Spoon batter into prepared pans, filling molds about 3/4 full.
- Bake for 10-12 minutes or until edges are slightly golden brown.
- Remove from oven and let cool for a few minutes before removing madeleines from the pan.
- Serve warm or at room temperature, dusted with powdered sugar if desired.
