- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 2 tbsp poppy seeds
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 lemon, zest and juice
Instructions

Preheat the oven to 375°F and grease or line a mini muffin tin.

In a mixing bowl, combine the flour, sugar, baking powder, poppy seeds, and salt.

In another bowl, whisk together the milk, vegetable oil, egg, lemon zest, and lemon juice.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Using a spoon or cookie scoop, fill the muffin cups about 3/4 full.
