How To Make Chocolate Éclairs Recipe

A classic French pastry filled with decadent chocolate pastry cream that is sure to impress anyone with a sweet tooth.

  • 1/2 cup water
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • Powdered sugar for garnish


  1. Preheat oven to 400°F.
  2. In a medium saucepan, heat water, milk, salt, and butter. Bring to a boil, and stir in the flour with a wooden spoon, stirring constantly until mixture forms a ball and pulls away from the side of the saucepan.
  3. Remove from heat and let cool for 5 minutes. Beat in eggs one at a time, mixing well after each addition.
  4. Using a pastry bag or a zip-top bag with the end snipped off, pipe the mixture into 8″ logs onto a parchment-lined baking sheet.
  5. Bake for 10 minutes and reduce oven temperature to 350°F. Bake for another 20-25 minutes or until golden brown. Let cool.
  6. For the filling, in a medium mixing bowl, beat heavy cream until soft peaks form. In another medium mixing bowl, whisk together sugar, cocoa powder, and salt then mix with the whipped cream. Add the vanilla extract and mix until smooth.
  7. To assemble, cut cooled éclairs in half horizontally. Fill the center with chocolate filling, and replace the top. Dust with powdered sugar before serving.
