How To Make Griddled Vegetable & Feta Tart

Ingredients
- 1 store-bought puff pastry sheet
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 200g feta cheese, crumbled
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions

Preheat a griddle pan over medium heat.

Roll out the puff pastry sheet and place it on the griddle pan. Cook for 5 minutes on each side or until golden brown.

In a separate pan, heat olive oil over medium heat. Add the sliced zucchini, bell peppers, and red onion. Cook until they are slightly softened, about 5-7 minutes.

Place the grilled vegetables on top of the cooked puff pastry. Sprinkle the crumbled feta cheese over the vegetables.

Season with salt and pepper to taste.

Place the tart back on the griddle pan and cook for an additional 10 minutes or until the cheese is melted and bubbly.

Garnish with fresh basil leaves before serving.
