  • 6 sheets of filo pastry
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 100g feta cheese, crumbled
  • Salt and pepper, to taste

Instructions

  1. Preheat your frying pan over medium heat.

  2. Heat 1 tablespoon of olive oil in the pan, then add the sliced onion, red bell pepper, and zucchini. Cook until the vegetables are softened, about 5-7 minutes. Remove from the pan and set aside.

  3. Lay one sheet of filo pastry on the pan, then brush with olive oil. Repeat with the remaining 5 sheets, overlapping them slightly to cover the pan.

  4. Spoon the cooked vegetables onto the filo pastry, spreading them evenly. Sprinkle the crumbled feta cheese on top.

  5. Fold the edges of the filo pastry over the vegetables and cheese, creating a rustic tart shape.

  6. Cook the tart on medium-low heat for about 10-12 minutes, until the bottom is golden brown and crispy. Carefully flip the tart over and cook for another 8-10 minutes, until the other side is also golden brown and crispy.

  7. Remove the tart from the pan and let it cool slightly before slicing and serving.

  8. Season with salt and pepper to taste. Enjoy!
