Ingredients

  • 1 lb ground sausage
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp fennel seeds
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked lentils
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup marinara sauce
  • 1/4 cup water
  • grated Parmesan cheese, for serving
  • chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the ground sausage, breadcrumbs, grated Parmesan cheese, chopped parsley, fennel seeds, dried oregano, red pepper flakes, salt, and black pepper. Mix well until all the ingredients are evenly combined.

  3. Shape the mixture into meatballs, about 1 inch in diameter, and arrange them on a baking sheet lined with parchment paper.

  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and browned.

  5. In the meantime, heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant.

  6. Add the cooked lentils, marinara sauce, and water to the skillet. Stir well to combine, and simmer for 5-10 minutes, until heated through.

  7. Once the meatballs are cooked, transfer them to the skillet with the lentil mixture. Gently stir to coat the meatballs with the sauce.

  8. Serve the sausage and fennel meatballs with lentils hot, garnished with grated Parmesan cheese and chopped fresh parsley.
