Ingredients

  • 1 sheet of ready-made puff pastry
  • 500g greengage plums, pitted and halved
  • 1 vanilla bean, split and seeds scraped
  • 100g sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 egg, beaten for egg wash

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Roll out the puff pastry and press it into a tart tin, trimming off any excess.

  3. In a large bowl, combine the greengage plums, vanilla seeds, sugar, cornstarch, and lemon juice. Mix well.

  4. Arrange the plum mixture on top of the puff pastry, spreading it out evenly.

  5. Brush the edges of the pastry with the beaten egg.

  6. Bake in the preheated oven for 40 minutes, or until the pastry is golden and the plums are tender.

  7. Remove from the oven and cool for a few minutes before serving.
