How To Make Greengage Jam

A sweet and fruity jam made from delicious greengages.

Ingredients

  • 1 kg greengages, pitted and halved
  • 500g granulated sugar
  • Juice of 1 lemon

Instructions

  1. Place the greengages and sugar in a large saucepan, and stir to combine.

  2. Let the mixture sit for 1 hour to allow the fruit to release its juices.

  3. Add the lemon juice to the saucepan and place it over medium heat.

  4. Cook the mixture, stirring occasionally, until the fruit is soft and the liquid has thickened, about 1 hour.

  5. Remove the saucepan from the heat and let the jam cool slightly.

  6. Use a blender or immersion blender to puree the jam for a smoother consistency (optional).

  7. Transfer the jam to sterilized jars and seal tightly.

  8. Allow the jam to cool completely before storing in the refrigerator.
