  • 1 ½ cups raisins
  • 1 cup water
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon zest
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon salt
  • 2 tablespoons butter, melted
  • 1 unbaked pastry crust

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a saucepan, combine the raisins, water, sugar, flour, lemon juice, lemon zest, cinnamon, nutmeg, and salt. Cook over medium heat, stirring occasionally, until the mixture thickens.

  3. Remove from heat and stir in the melted butter. Let the filling cool slightly.

  4. Line a pie dish with the unbaked pastry crust. Pour the raisin filling into the crust.

  5. Place the pie dish in the preheated oven and bake for 45 minutes or until the crust is golden brown and the filling is bubbly.

  6. Remove from the oven and let the pie cool completely before serving.
