Ingredients

  • 200g chocolate cookies
  • 80g melted unsalted butter
  • 250g cream cheese
  • 200g dark chocolate, melted
  • 100g granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 6-inch round cake pan.

  2. Crush the chocolate cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of the pan to form the crust.

  3. In a large bowl, beat the cream cheese until smooth. Add the melted dark chocolate, sugar, eggs, and vanilla extract. Mix until well combined.

  4. Pour the chocolate cheesecake mixture over the crust and spread evenly.

  5. Bake for 50 minutes or until the center is set but slightly jiggly.

  6. Remove from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

  7. Serve chilled and garnish with chocolate shavings or fresh fruits, if desired.
