Ingredients

  • 1 cup Arborio rice
  • 2 cups whole milk
  • 1/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch pie dish.

  2. In a medium saucepan, combine the rice, milk, and sugar. Cook over medium heat, stirring occasionally, until the rice is tender and the mixture has thickened, about 20 minutes.

  3. In a small bowl, beat the eggs, vanilla extract, cinnamon, and salt together. Gradually add the egg mixture to the rice mixture, stirring constantly.

  4. Pour the rice mixture into the prepared pie dish. Sprinkle the raisins on top if desired.

  5. Bake for 40 minutes, or until the top is golden brown and the center is set.

  6. Allow the pie to cool for at least 30 minutes before serving. Serve warm or chilled.
