Ingredients

  • 1 cup cooked flageolet beans
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup chopped spinach
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 3 eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 pre-made pie crust

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a skillet, sauté the onion and garlic until softened.

  3. Add the spinach and cook until wilted. Remove from heat and let it cool.

  4. In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg.

  5. Add the flageolet beans, cooked onion, garlic, and spinach to the egg mixture.

  6. Pour the filling into the pre-made pie crust.

  7. Bake for 40-45 minutes or until the pie is set and golden brown.

  8. Remove from the oven and let it cool for a few minutes before serving.
