How To Make Summer Fish Pie

Ingredients

  • 500g white fish fillets
  • 300g potatoes, peeled and diced
  • 1 onion, chopped
  • 1 carrot, diced
  • 200ml fish stock
  • 200ml cream
  • 2 tbsp butter
  • 2 tbsp flour
  • Salt and pepper, to taste
  • Fresh herbs (such as parsley or dill), for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large pan, bring water to a boil and cook the potatoes until tender. Drain and set aside.

  3. In a separate pan, melt the butter and sauté the onion and carrot until softened.

  4. Add the flour and cook for a minute, stirring constantly.

  5. Gradually pour in the fish stock and cream, stirring continuously until the sauce thickens.

  6. Add the fish fillets to the sauce and cook for 5 minutes, or until the fish is cooked through and flakes easily.

  7. Gently fold in the cooked potatoes and season with salt and pepper.

  8. Transfer the mixture to a baking dish and bake for 25-30 minutes, or until the top is golden brown.

  9. Garnish with fresh herbs and serve hot.
