  • 2 cups frozen blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 pie crust

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the frozen blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla extract. Mix well.

  3. Roll out the pie crust and place it into a 9-inch pie dish.

  4. Pour the blueberry mixture into the pie crust, spreading it evenly.

  5. Place the pie dish on a baking sheet to catch any drips. Bake in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.

  6. Remove from the oven and let it cool for at least 30 minutes before serving.
