  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips
  • 1/4 cup melted butter
  • 1/4 cup milk
  • 1/4 cup plain yogurt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large bowl, combine the oats, flour, brown sugar, chocolate chips, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together the melted butter, milk, yogurt, egg, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Spoon the batter evenly into the muffin cups, filling each about 2/3 full.

  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  7. Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
