  • 200g white chocolate, chopped
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 tablespoon strawberry jam
  • Mint leaves for garnish

Instructions

  1. Melt the white chocolate in a heatproof bowl over a pan of simmering water. Stir until smooth and set aside to cool slightly.

  2. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  3. Gently fold the whipped cream into the melted chocolate until well combined.

  4. Fold in the chopped strawberries and strawberry jam.

  5. Pour the mixture into a loaf pan lined with parchment paper and smooth the top with a spatula.

  6. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until set.

  7. Once set, remove from the pan and slice into individual servings.
