Ingredients

  • 2 cups of heavy cream
  • 1 cup of condensed milk
  • 1/2 cup of mixed dried fruits (raisins, currants, chopped dates)
  • 1/4 cup of chopped candied peel
  • 1/4 cup of brandy
  • 1 tsp of mixed spice (cinnamon, nutmeg, cloves)
  • 1/2 tsp of vanilla extract

Instructions

  1. In a large bowl, whisk the heavy cream until soft peaks form.

  2. Slowly pour in the condensed milk while continuing to whisk until well combined.

  3. Stir in the mixed dried fruits, candied peel, brandy, mixed spice, and vanilla extract.

  4. Pour the mixture into a freezer-safe container and freeze for at least 6 hours or until firm.

  5. Serve the Christmas pudding ice cream in bowls or cones, garnished with additional dried fruits if desired.
