Ingredients

  • 1 1/2 cups of mixed dried fruits (such as raisins, currants, and chopped dates)
  • 1/2 cup of chopped almonds
  • 1/2 cup of breadcrumbs
  • 1/4 cup of all-purpose flour
  • 1/4 cup of dark brown sugar
  • 1/4 cup of melted butter
  • 2 tablespoons of molasses
  • 2 tablespoons of brandy (optional)
  • 1 teaspoon of mixed spice (such as cinnamon, nutmeg, and cloves)
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 2 eggs, beaten
  • 1/2 cup of milk

Instructions

  1. In a large bowl, combine the dried fruits, almonds, breadcrumbs, flour, brown sugar, melted butter, molasses, brandy (if using), mixed spice, baking powder, and salt. Mix well.

  2. In a separate bowl, whisk together the beaten eggs and milk. Pour the mixture over the dry ingredients and stir until fully combined.

  3. Grease the slow cooker with butter or cooking spray. Pour the pudding mixture into the slow cooker, spreading it evenly.

  4. Cover the slow cooker with its lid and cook on low heat for 8 hours. Avoid opening the lid during cooking to retain moisture.

  5. Once cooked, remove the pudding from the slow cooker and let it cool for a few minutes. Carefully invert it onto a serving plate.

  6. Serve warm with your choice of custard, whipped cream, or vanilla ice cream.
