Ingredients

  • 4 ripe peaches
  • 1 cup of sugar
  • 1 cup of water
  • 1 tsp of vanilla extract
  • 1 cup of fresh blueberries

Instructions

  1. Peel the peaches and cut them in half, removing the pits.

  2. In a medium saucepan, combine the sugar, water, and vanilla extract. Heat over medium heat until the sugar is dissolved, stirring occasionally.

  3. Add the peach halves to the saucepan and simmer for about 10 minutes, or until the peaches are tender.

  4. Remove the peaches from the saucepan and set aside.

  5. Increase the heat to medium-high and cook the remaining liquid until it thickens and becomes a caramel sauce, about 5 minutes.

  6. Place the poached peaches in serving bowls and drizzle with the caramel sauce.

  7. Top with fresh blueberries.

  8. Serve warm or chilled.
