How To Make Raisin Rats
These easy baked raisin rats cookies are made buttery with a rich brown sugar flavor, hints of spices, and just the right amount of raisins.

Ingredients
- 2tspground cinnamon
- ¼cupwhite sugar
- 2cupsall purpose flour
- 1cupbrown sugar,packed
- ¼tspground nutmeg
- ¾cupbutter,or margarine, softened
- 1egg
- 1cupraisins
Instructions

Preheat the oven to 400 degrees F. Lightly grease cookie sheets.

In a small shallow dish, stir together the cinnamon and white sugar; set aside.

In a medium bowl, stir together the flour, brown sugar, and nutmeg. Cut in butter using a pastry blender or a finger, until the mixture resembles coarse crumbs.

Add egg to the brown sugar mixture, and mix into a stiff dough for 1 to 2 minutes. Mix in raisins.

Roll dough into 1-inch balls, and roll the balls in the cinnamon-sugar mixture. Place cookies 2-inches apart onto the prepared cookie sheets.

Bake for 10 minutes in the preheated oven, or until lightly browned just around the edges. Remove from baking sheets to wire racks to cool.
