How To Make Pistachio & coriander seed biscuits

Ingredients
- 1 cup all-purpose flour
- 1/2 cup roasted pistachios, finely chopped
- 1 tsp coriander seeds, crushed
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
Instructions

Preheat oven to 350°F (175°C).

In a bowl, mix together flour, chopped pistachios, crushed coriander seeds, and salt.

In another bowl, cream together softened butter, sugar, and vanilla extract until light and fluffy.

Gradually add the dry ingredients to the butter mixture and mix until well combined.

Shape the dough into a log, wrap it in plastic wrap, and refrigerate for 30 minutes.

Take out the chilled dough log and slice it into 1/4 inch thick rounds.

Place the biscuit rounds on a baking sheet lined with parchment paper.

Bake for 15-20 minutes or until the biscuits are golden brown around the edges.

Allow the biscuits to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
