How To Make Pistachio Pilau Rice

Ingredients
- 2 cups basmati rice
- 1/2 cup shelled pistachios
- 2 tbsp ghee (clarified butter)
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp cardamom powder
- 1/4 tsp cinnamon powder
- 1 bay leaf
- 4 cups water
- Salt, to taste
Instructions

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.

In a large pan, heat the ghee over medium heat. Add the sliced onions and cook until they are golden brown.

Add the minced garlic, cumin seeds, ground coriander, turmeric powder, cardamom powder, cinnamon powder, and bay leaf to the pan. Cook for 1-2 minutes until the spices are fragrant.

Add the drained rice to the pan and stir well to coat the grains with the spices. Cook for 1-2 minutes.

Add the water and salt to the pan and bring to a boil. Reduce the heat to low, cover the pan, and simmer for 15 minutes, or until the rice is cooked and the water has been absorbed.

Remove the pan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.

Garnish the pilau rice with shelled pistachios before serving.
