Ingredients

  • 1 cup flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tbsp flour
  • 1/2 tsp baking powder
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • Powdered sugar, for sprinkling

Instructions

  1. Preheat the oven to 350°F.

  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the softened butter until crumbly.

  3. Press the mixture evenly into the bottom of an 8×8 inch baking dish.

  4. Bake for 15-20 minutes, until lightly browned.

  5. In another mixing bowl, whisk together the eggs, granulated sugar, flour, baking powder, lemon juice, and lemon zest until smooth.

  6. Pour the mixture over the baked crust and bake for another 20-25 minutes until set.

  7. Allow to cool before slicing into bars and dusting with powdered sugar.
