How To Make Chocolate Covered Caramels

Ingredients

  • 1 cup of sugar
  • 1/2 cup of heavy cream
  • 2 tablespoons of unsalted butter
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of vanilla extract
  • 1 cup of semi-sweet chocolate chips

Instructions

  1. In a medium saucepan, combine the sugar, heavy cream, butter, and salt. Cook over medium heat, stirring constantly, until the mixture reaches 248°F (120°C) on a candy thermometer.

  2. Remove the saucepan from the heat and stir in the vanilla extract. Let the caramel cool for a few minutes.

  3. Line a baking sheet with parchment paper. Using a teaspoon, drop small portions of the caramel onto the parchment paper, shaping them into small rounds or squares.

  4. Place the baking sheet in the refrigerator and let the caramel firm up for about 20 minutes.

  5. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval, until the chocolate is smooth and melted.

  6. Take the caramel pieces out of the refrigerator and dip each one into the melted chocolate, coating them completely. Place them back on the parchment paper.

  7. Once all the caramel pieces are coated in chocolate, place the baking sheet back in the refrigerator and let them set for at least 30 minutes.

  8. Once the chocolate is set, remove the caramels from the refrigerator and serve.
