  • 1 cup granulated sugar
  • 4 tbsp honey
  • 4 tbsp water
  • 1 tbsp baking soda
  • 1 tsp vanilla extract
  • Cooking spray or oil for greasing

Instructions

  1. Line a baking sheet with parchment paper and grease it with cooking spray or oil.

  2. In a medium-sized saucepan, combine the sugar, honey, and water. Stir over medium heat until the sugar has dissolved.

  3. Bring the mixture to a boil and let it simmer for about 5 minutes, until it reaches 300°F (150°C) on a candy thermometer.

  4. Remove the saucepan from heat and quickly stir in the baking soda and vanilla extract. The mixture will foam up, so be careful.

  5. Pour the hot mixture onto the prepared baking sheet and let it cool and harden for about 10-15 minutes.

  6. Once the honeycomb has hardened, break it into small and irregular pieces using a kitchen mallet or the back of a knife.

  7. Serve the honeycomb as is or use it as a topping for ice cream, yogurt, or desserts.
